
Happy St. Patricks Day! This is my shamrock cake I baked tonight along with the traditional corned beef and cabbage with red potatoes, carrots, onions and cabbage. I made some Irish soda bread as well. I found a few people to come and partake in the feast so unfortunately there were no leftovers which means no Reuben sandwich for lunch tomorrow! The sprinkles are tiny shamrocks...thanks Liz for all the festive goodies!
I thought I would take a moment to tell you all WHY we (Catholics in particular) celebrate St.Pats day. Patrick was born to Roman parents in Scotland back in 385. When he was 14 he was kidnapped and taken to the pagan land of Ireland to work as a slave sheep herder. He had been raised with a solid faith in God so he said many prayers to be set free. When he was 20 years old he saw his moment to escape and did. Back in Scotland he studied and became an ordained priest. There he was given the mission to bring Christianity to the people, his captors, of Ireland. He did and go back and introduced the people to his Catholic faith and found a following. He traveled with others all over Ireland spreading the Good Word of the Lord. In fact the little shamrock we have grown to know was a teaching tool for him. The three leaves represent the Holy Trinity; Father, Son and the Holy Spirit...Amen!
